My mother made delicious biscuits and gravy, and my father was always begging her to make them for breakfast; that was his favorite breakfast. She used bacon grease, all purpose flour, and table salt, and cow's milk. Like my dad, I am a big fan of biscuits and gravy, but unlike my mom, I do not use those heavy, acidifying ingredients. And I know she would gladly make the substitutions I have made, if she had heard about them back in the day. And I think my dad would have appreciated my biscuits-and-gravy make-over, even if it took a while to get used to. Instead of bacon grease, I use vegan butter and/or olive oil. Instead of all purpose flour, I use a combination of whole wheat, unbleached, and sometimes sprouted grain wheat. Instead of regular table salt, I use sea salt. I replace the cow's milk with almond milk. Many of my recipes use non-traditional ingredients such as sprouted grain flour, stevia, agave nectar, and/or guinoa to support a diet low in acidifying elements. Nevertheless, they are yummy, fun to prepare, and fill the tummy while delighting the soul.
